Depuration Facility
Depuration refers to the process in which shellfish are cleaned and purified under controlled conditions. Prince Edward Aqua Farms has continued with their innovate spirit and currently has the only licensed shellfish depuration facilities on the Island.
High volumes of salt water are circulated through each holding tank to ensure any impurities the shellfish may have contacted or ingested prior to arriving at the plant are filtered out and removed. This process is conducted at the plant's in-house laboratory under the supervision of an experienced technician.
Traditionally, the filtration process for shellfish would take place in the ocean and would require 14 days to complete before being tested. The filtration process in use in the plant at Prince Edward Aqua Farms is efficient enough that the same process can be completed in 48 to 72 hours.
After the filtration cycles are complete, the shellfish are certified depurated.Depuration is a process practiced and accepted globally; England, France, Spainand Australia have successfully employed it for years with a variety of species.It represents a means of assuring consumers of a clean and safe product and ensuringthat shellfish shipped from Prince Edward Aqua Farms meet the highest standardsof quality and freshness.
